Yummy dish tonight!

So I was not sure what I was going to make for supper tonight's. I decided to fry up baby spinach in olive oil, salt and pepper. I also pan fried chicken in vegetable oil and butter, with pepper and sea salt. As a side I had a microwaved baked potato.
It was delicious. I will definitely make it again. It was much healthier than pizza from the pizza shop. I am proud of myself for that. :)
It turned out great, although I was not a fan of cooked spinach. It was okay.
I wish I had taken a photo of my dish. Oh well maybe next time!
What will we have tomorrow. Oh and to top it off I had a yummy smoothie. Fruit and yogurt :) so good.

A Cup of Coffee and a Plate of Ideas

So, last night while I was not getting any sleep from my two little ones, so I started thinking of ideas for my hubby's birthday cake. He is going to be 29 and i want to do something cool for this year :).
Ready for it?? ........ It's an Angry Birds Cake. I have searched high and low and believe I have made the easiest and coolest idea for this. I will take pics and show you during the process soon :)

Mommy is just one job of many!

So it has been a while. I have two little ones now and a fantastic husband! I want to become healthier for our kids and for the both of us.
I've realized once you fall into the pit of buying food from fast food places it becomes all too easy to do it. So from scratch is where I want to go. We have a pasta maker attachment on our new Kitchenaid Mixer (mother in law and I share). So I want to try that. Maybe tomorrow. I was thinking of some yummy ravioli, with spinach and cheese. :)
I will be brainstorming some yummy dishes and seeking some out from the internet and any one wanting to share with me. So go ahead. I may not have anyone reading this but we shall see!

Cooking Adventure: Recipe #2

So I keep saying that I am doing a recipe, than I go to prepare and I change my mind. So i decided: Recipe 195 "Ricotta Pasta with Tomatoes al Forno" on page 171. (365: No Repeats, Rachel Ray. 2005)

So I ended up actually making: "Cottage Cheese Pasta with Tomatoes al Forno" Instead of the Ricotta i used Cottage Cheese, instead of Parmigiano-Reggiano I used Parmasean cheese. Also instead of Crushed tomatoes I used crushed tomatoes. Maybe I will post the recipes. So you can share them. But give credit where credit is due.:)
 I was having a rough day and cooking this recipe helped me out a lot. I will continue this tomorrow though..

Cooking Adventure: Recipe #1

So i forgot to blog about how the recipe turned out. Well it sorta turned out. It tasted good but i ended up making #222 Oven-Baked Corn Dogs (pg 196).

It was yummy.. aside from the fact that it fell to the sides. I think the hot dogs need to be dried off and less batter on them. I will make them again I just will be careful next time. My 1 and a half year old liked them too. Mostly the hot dogs though.

I will definitely make it again.

Tomorrow I am thinking of making #224 White Pita Pizzas. Hopefully that will turn out better.

Cooking Endeavor

So I know it's not the next day, but I just have to say: I found THE book! Rachel Ray; 365 Recipes: No Repeats.

I look forward to working through this recipe book. Thanks a lot Rachel! I'm very excited about this endeavor. And Really who cares if any one reads this? Well i know i have one fan: Carolyn!

My whole problem is that we eat a lot of unhealthy snacks and sometimes meals (take out pizza), So I do hope this will help me with developing and experimenting to make my own recipes. So I think the first recipe shall be.... hmmm let me check the cookbook.

So 10 minutes later...
I picked: Mega Meatball Pizza and Zippy Italian Popcorn. On page 6. Whether or not anyone will eat this I am excited about it nonetheless.

So my next blog will be about how it turned out and some comments about it as well... But right now its 11:25 pm, and I should probably go to bed. Goodnight all!

Cooking Miracle

So i ended up making the chicken parmagiana, as i wrote previously... And let me tell you it turned out better than i thought. It had a different taste than my first one. But not a bad taste at all. The maple syrup added a great sweetness to it and actually brought out the taste of the tomatoes. Which is a great encouragement. If something goes wrong in the kitchen: try to fix it, you may be surprised.

Now my friend who also has a blog, gave me an idea of making gnocchi. I have never had it in my life, but it can't be a bad idea. But what do i have with it? Hmmm I'm going to do some research on that too. Maybe like Julie and Julia type of blog ha ha.
Which is one of the many movies i love.
I'll find a cookbook and cook out of that. Now i just need to find a good cookbook. That is the hard part. Instead of french cooking, i do love to eat and cook Italian. Since it is my heritage. Well one part of it.

My boyfriend's family is Irish. So maybe I can find some good Irish recipes too. I have to find the perfect cookbooks.
First I'll go to a bookstore website, and find a good an ideal cookbook. I'm pretty excited about this.
My only problem is i get distracted easily, so i will have to try my damnedest. That means I have to actually do it. :P Let's see how this goes!
